The Food Engineering/Food Processing Laboratory (0536) provides equipment and facilities to explore a variety of food processing aspects.


RETORT


The laboratory contains equipment to develop new food products, study heat exchangers, sterilize liquids (e.g., milk), measure processing time and temperature variables, measure reflected or transmitted color of products, and a variety of other equipment to work with raw or processed food products. The laboratory provides facilities where students can become familiar with modern processing techniques and processes and where they can experience the effects of processing variables on food properties, appearance, taste, nutrition and safety. The laboratory also supports the Department of Biological Resources Engineering's research and extension programs in food engineering and programs in food processing of the Department of Nutrition and Food Science.
